The wine has a bouquet of pear and white nectarine; the palate is full and rounded with stonefruit and grapefruit flavours. 2009 Sauvignon Blanc

2008 Limited Release Pinot Noir/Chardonnay
This is a hand-made sparkling wine, from the cool climate region of Tumbarumba - one of the best sparkling regions in Australia. We've been buying these grapes from Mal Barclay for 10 years now, and after matching the high quality fruit with a little oak, the wine was then hand-bottled, aged for 2 years, then hand-disgorged. Sparkling making is now a speciality for the university, and we think you will understand once you have enjoyed this premium wine. Beware imitations!

2008 Cellar Reserve Cabernet Sauvignon/Shiraz
Selected from only 6 barrels of the 2008 vintage, all off our vineyards in Orange, this wine is a blend of our two best blocks. The blend of varieties is a traditional Aussie style, but ours shows what can be achieved with that tradition using cool climate grapes. The Shiraz gives pepper and spice, while the Cabernet gives mint and herbs. The palate is medium-bodied, but the tannins are long and silky.
